Quick Brussel Sprout Pasta Dinner

I found this recipe on Food & Wine a LONG time ago! It called for asparagus, which I used in the beginning, but once I found brussel sprouts I had to try it and never looked back! It is so quick (only 20 minutes!), easy and most importantly delicious! I've made it my own over the years (ALL Trader Joe's products :)) and made it as fast as possible! Here's how I do it! Let's make it!

You will need (all from Trader Joe's):
One bag of shredded brussel sprouts
One bag of pasta (your choice)
Parmesan cheese
Balsamic
Butter (one tablespoon)

First set the oven to 450. Fill a pot with water and put it on the stove. Set on high to boil.
While the oven heats up, grab a big baking sheet and dump the Trader Joe's shredded brussel sprouts onto the sheet. Sprinkle with salt and drizzle with olive oil.

Once oven is heated to 450 add the sprouts to the oven and bake for 15 minutes. I just leave them in the entire time without flipping them.
When there is 7 minutes left on your brussel sprouts timer, add the pasta to the boiling water. After the 7 minutes is up, dump out the water and add back into the empty pot.

Add baked brussel sprouts to the pot of pasta, along with parmesan cheese, a big tablespoon of butter and balsamic. I usually add balsamic and parmesan, mix up and add more if necessary. You really can't add to much of each in my opinion!
And that is it! You are done and ready to eat a yummy meal and vegetarian in only 20 minutes! I split it into 2 large dinner portion for me and Spencer. Then put some aside for lunch the following day! Let me know what you think! It is my go to Monday night Bachelor / Bachelorette meal!
